Yields 10 servings

Ingredients for the Clementine Cordial (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Premix (produces 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Instructions

To prepare the Cordial: Combine all the components inside a pot, heat until it reaches a simmer, agitating until the sugar dissolves. Next, turn off the heat allowing it to cool down entirely. Transfer into an sterilised bottle, cap it keeping it in the refrigerator, it will last for up to a month.

Preparing the Premix: Mix the specified liquid ingredients into a big jug, allow it to infuse for 60 minutes, then filter it best through a fine cloth, to ensure it's fully clarified.

When ready to serve: Measure 85ml from the cocktail base to a stirring glass packed with ice, and agitate carefully for a minute to cool it down. Filter into a cold coupe glass or similar, decorate with some cranberries adding the final touch by giving it a quick spritz of mandarin oil over the drink.
